All Natural, Pasture Raised Freezer Lambs

Whole freezer lambs are available in the Fall (September & October). You will receive 30-40 pounds of meat, depending on what you request for cuts. Price is $6.50 per pound hanging weight. A few lambs may be smaller. Lambs go fast, so it is recommended that you reserve your lamb no later than August. Some Common Questions:

What is hanging weight, and why am I charged for that weight instead of the final net weight?  
The hanging weight is the weight of the lamb at the point that it is ready to be cut to your specifications. The hanging weight includes all of the potentially usable meat and associated bones. This weight is obtained with the meat cutter' scale, and it is the weight that is used to calculate charges for cutting and wrapping. Using this weight is the fairest and most consistent method for calculating price. Please note however that the final yield is less than the hanging weight. The actual yield is influenced by the size of the individual lamb and how many cuts involving removal of bone are requested by the customer.

What will the cuts be like?
Cuts will be wrapped in butcher paper in appropriately-sized packages. Each cut will be identified and the number of cuts listed. You will receive your order frozen.

How much space will I need?
If your space is limited to the freezer portion of your fridge, one whole lamb will probably take up most of that space. If you request bones, and/or if it was a particularly large lamb, more space may be required. If space is at a premium, other options include purchasing a half lamb with another person.

What about decisions about cuts?
Lamb cuts are fairly standard. Options include:
  • Lamb chops or rack of lamb
  • Leg: bone in or bone out (if lamb is over 32 pounds)
  • Shoulder: chops or roast (boneless roast if over 32 pounds)
  • Stew meat or ground meat
Where will I pick up my lamb when it's ready?
When your lamb is ready I will contact you and you will be able to pick up your order at the farm in Pembroke, Massachusetts. Delivery is also possible for an additional $10 charge.

Farm raised rabbit meat is also available at West Elm Farm through out the year. The price is $5.95 per pound, average carcass weight is 2.5-3lbs.  contact us today for availability, and to place an order.
  • Rabbit has 795 calories per pound. Compare: chicken at 810, veal at 840, turkey at 1190, lamb at 1420, beef at 1440 and pork at 2050.
  • Rabbit has the highest percentage of protein.
  • Rabbit has a lower percentage of fat than chicken, turkey, beef, or pork with unsaturated fatty acids at 63% of the total fatty acids.
  • The cholesterol level in rabbit meat is much lower than chicken, turkey, beef, pork.
  • The U.S. Department of Agriculture has stated that domestic rabbit meat is the most nutritious meat known to man.
  • Research shows that rabbit meat has been recommended for special diets such as for heart disease patients, diets for the elderly, low sodium diets, and weight reduction diets.
  • Because it is easily digested, it has been recommended by doctors for patients who have trouble eating other meats.
